Sierra Silver is a Blanco-category tequila from Jalisco, Mexico, made from blue Weber agave and bottled without any ageing in wood. The brand belongs to the Stock Spirits group, and the spirit itself is produced at the Destilerías Sierra Unidas distillery in the Guadalajara region. The base of every tequila is the Mexican agave tequilana Weber variedad azul, also known as blue agave or agave azul.
The raw material comes from the area around Guadalajara. The agaves grow in valleys and highlands near the city, at an altitude of about 1,600 metres, in a region known for its mineral-rich red soil. The harvest is carried out by skilled jimadores, who deliver the whole plants to the distillery.
The character of the spirit is determined by the production method. Sierra is distilled twice in traditional pot stills, and the double distillation preserves the fruity notes typical of this brand's tequila. Once production is complete, the fresh distillate rests and harmonises for several weeks in stainless steel tanks; tequila bottled directly after distillation and harmonisation is called Blanco or Plata, and is known internationally as Silver. It is worth noting that this is a mixto-type tequila – by law, tequila must contain at least 51% agave sugar, while the remaining sugars may come from other agricultural sources, here from Mexican sugar cane from Jalisco.
Freshness and fruit dominate the aromatic profile. Sierra Silver is a clear Blanco tequila with a full, fruity and fresh aroma with a light hint of chilli, enhanced by the blue Weber agave, along with delicate accents of green apple and young pineapple, while pepper lends the spirit its expressiveness. The spirit is 35% ABV and comes in a 0.7-litre bottle with its distinctive red sombrero-shaped cap. It works well as a cocktail base, including in a Margarita, as well as in the classic ritual with salt and lemon.
