Nikka Discovery – this is a series of limited editions, encompassing various experiments at every stage of the whisky production process. The typical single malt from the Yoichi distillery, located on the island of Hokkaido, has a smoky, peaty, slightly salty character. In this rare edition, part of the Discovery series, Nikka gives us the opportunity to discover the whisky in an unpeated version. It was produced exclusively from unpeated barley malt and represents a pleasant, delicate, fruity "surprise" from Yoichi, hitherto associated with a completely different style of whisky. The subtle, smoky accents perceptible in the whisky are the result of distillation in traditional coal-fired pot stills, in which the peated version of Yoichi is distilled on a daily basis. Number of bottles 20,000, strength 48%. The aroma is balanced, initially barley malt, fruit (green bananas, apples), acacia honey, then tropical fruit (pineapple), spices (coriander, ginger, black pepper), herbs (lovage). On the palate, initially citrus fruit (lemon, grapefruit), then vanilla, roasted coffee, a slight bitterness, an excellent balance of sweetness and spiciness. The finish is long and rich, and like the first aroma, the finish focuses on malted barley, then anise, vegetal notes (courgette flower) and creamy notes (coconut milk), hazelnuts, almonds and juicy fruit (pear). The empty glass is malty and spicy (cinnamon, clove).
