Yellow Spot 12YO is a Single Pot Still Irish Whiskey produced at the Midleton distillery and bottled at 46% ABV. Yellow Spot 12 year old Single Pot Still Irish Whiskey is produced exclusively for Mitchell & Son Wine Merchants of Dublin, where the brand was born. The name itself dates back to the days when the Mitchells sold a range of Irish whiskeys under the "Spot" brand, the designation deriving from the practice of marking casks of different ages with a spot of coloured paint. A blue spot denoted 7 years, green 10 years, yellow 12 years and red 15 years. The modern-day Yellow Spot was relaunched in 2012.
Single Pot Still is a style characteristic of Ireland. The whiskey is made from a mash of unmalted and malted barley (30% each) from a single distillery and is traditionally triple distilled in pot stills. The character of this edition is determined by maturation in three types of cask. The whiskey contains Single Pot Still components aged in bourbon casks, sherry casks and Malaga wine casks, which gives it an additional layer of complexity compared with the younger Green Spot and reaches into the more elaborate aspects of Single Pot Still spirit. Unlike whiskeys that are merely "finished", Yellow Spot contains distillate matured for a full 12 years in three types of oak cask: American bourbon barrels, Spanish sherry butts and, exceptionally, Spanish Malaga wine casks.
On the nose we find mown hay and crushed black pepper, red bell pepper, nutmeg, clove oil and green tea, along with honeyed sweetness and peaches derived from the Malaga casks. On the palate, honeyed sweetness resonates with the spices typical of Pot Still, flavours of fresh coffee, creamy milk chocolate and crème brûlée, plus notes of red apples and toasted oak. The palate is equally fruity, with considerable structure and a velvety texture.
The finish of this whiskey is refined and complex, with sweetness present throughout, closing with a blend of red grapes and dry barley. This is a classically fruity pot still whiskey, with grape sweetness hidden behind notes of tropical and orchard fruits and well-balanced accents of spice and citrus.
