Rooster Rojo Reposado is a reposado-category tequila from the Mexican state of Jalisco, made entirely from Blue Weber agave and bottled at 38% ABV. It is produced at the Fabrica de Tequilas Finos distillery in the town of Tequila, at the foot of Tequila Hill, under the watchful eye of master distiller Arturo Fuentes Cortes, using Blue Weber agave sourced from the Los Altos de Jalisco region.
The production process is based on methods the distillery has been developing since 2000 in the building of a former colonial estate. Cooking takes place in autoclaves – without diffusers – with steam for 10 hours, after which a proprietary yeast strain is added to the juice and fermentation lasts up to 72 hours. The distillate then undergoes double distillation in stainless steel pot stills. After distillation, the tequila is diluted to its target strength with water filtered through Mexican silver, which gives it a smoother, gentler profile. Each batch is blended for consistency, and the brand states that it was the first in the tequila category to use this method of filtering water through silver.
The character of a reposado is shaped by maturation in wood. Rooster Rojo matures under controlled humidity conditions, with the reposado expression resting in large French oak barrels for at least two months. The result is a fruity, creamy profile with a light note of oak, working equally well as a cocktail base and for sipping neat.
The aroma and flavour profile is dominated by fruit, vanilla and roasted agave. The nose opens with a light note of oak, aromas of ripe fruit and roasted agave, while the palate reveals vanilla, caramel and roasted agave, leading into a smooth, warm and rounded finish of medium length.
