Rooster Rojo Blanco is a blanco category tequila from the Mexican state of Jalisco, produced from 100% Blue Weber agave and bottled without ageing. ABV 38%.
Behind the brand stands a distillery in the town of Tequila, at the foot of the Tequila volcano, formerly known as Fabrica de Tequilas Finos. The facility began operating in 2000, adapting a historic colonial-style building dating from 1923. The raw material is Blue Weber agave. Rooster Rojo is made from 100% Blue Weber agave from the Los Altos highlands, and after harvesting the piñas are baked in autoclaves for 10 hours.
The process combines a traditional approach with a solution characteristic of the brand. The distillery's proprietary yeast is added to the juice, starting a 72-hour fermentation, after which the liquid undergoes double distillation in stainless steel stills designed to preserve the flavours and aromas of the agave. After distillation, the tequila is diluted to its target strength with water filtered through Mexican silver — a solution the brand was the first to introduce, and one that gives a softer, smoother profile.
The profile is dominated by freshness and a peppery note. The nose is fresh and lively, with hints of citrus and mint; the palate begins sweetly, with a quickly developing peppery spice and a touch of earthiness, while the finish is medium in length, silky, with a distinct peppery accent. This is an unaged tequila, retaining the raw, vegetal character of baked agave.
Rooster Rojo Blanco works well both sipped from a chilled glass and in cocktails. It can be served as a chilled shot, over ice, or topped up with sparkling water and lime juice.
