Knappogue Castle 12 Year Old is an Irish Single Malt from County Clare, matured for twelve years exclusively in ex-bourbon casks. It is the brand's flagship expression, made solely from malted barley. It is bottled at 43% ABV.

The brand takes its name from Knappogue Castle in County Clare. Knappogue Castle is a relatively small Irish whiskey brand, named after the fifteenth-century castle built in 1467 by Sean MacNamara in County Clare, Ireland. Before the introduction of the twelve-year-old expression, the new Knappogue Castle range was designated by vintages based on the year of distillation and changed annually – among them the 1990, 1991, 1992, 1993, 1994 and 1995 vintages. The decision to move from vintage dating to an age statement was made in order to present a more consistent range.

The production method is based on malted barley and triple distillation. The whiskey is distilled three times, batch by batch, in traditional onion-shaped copper pot stills, and then matures in oak ex-bourbon casks for twelve years. The gentle distillation process, together with the damp and temperate climate, gives this Irish Single Malt its distinctive flavour.

The profile is dominated by grain, fruit and mild spice. Following the move away from vintages, Knappogue Castle 12 Year Old is a triple-distilled Irish Single Malt from bourbon casks. On the nose, vanilla butter biscuits, black peppercorn and chewed malt. Gentle oak spice and vanilla cream, with a hint of freshly cut grass. Orchard fruits on the long finish. In a Whisky Advocate review, Knappogue 12 Year Old was described as a fresh, clean whiskey with a creamy texture, with honeyed vanilla, toasted marshmallow and an abundance of fruit – citrus, pineapple, coconut and peach. A soft, dry oak finish balances the sweetness and adds a touch of spice.
