Courvoisier XO is a cognac from the Cognac appellation, blended from eaux-de-vie aged between 11 and 25 years. It is produced in the town of Jarnac in the Charente region, in the heart of the official Cognac appellation. The house style is the responsibility of the Master Blender, who selects the eaux-de-vie from the region's finest crus.
The blend is built on four crus. The eaux-de-vie come from Grande Champagne, Petite Champagne, Borderies and Fins Bois. The base grape variety is Ugni Blanc. Rather than distilling in-house, the house works with distillers while maintaining strict control over every stage of production – from the selection of Ugni Blanc grapes to double distillation in traditional charentais copper pot stills. The eaux-de-vie are then aged in oak casks, which shapes the tannin structure and velvety texture.
In the aromatic profile, floral and fruity notes take centre stage. The bouquet is interwoven with accents of crème brûlée, candied orange and iris blossom; the hand toasting of the casks yields notes of vanilla and caramel that mature into a warm crème brûlée aroma, the sweet candied orange comes from the Grande Champagne crus, and the pronounced iris bouquet derives from mature cognacs from Borderies. Delicate yet rich fruity notes of figs, raisins, plum and candied orange build a multi-layered character. On the palate the entry is round and silky, with immediate notes of orange and vanilla, while the mid-palate expands with apricot, pear and dark chocolate, carried by a distinctly velvety texture.
Within the category, Courvoisier XO sits on the lighter, fruitier side. Compared with Hennessy XO, Courvoisier XO leans towards a more floral, fruity profile with pronounced notes of orange and iris. It is bottled at 40% ABV. It pairs well with dark chocolate and mature cheeses – the sharp, pronounced and salty flavour of Roquefort balances the richness of the cognac and brings out its profile.
