Wild Fields Sherry Cask Single Wheat Polish Whisky is a Polish wheat whisky from the Silesian Beskids, matured in casks that previously held Spanish sherry. It is produced at the distillery in Jasienica in Cieszyn Silesia, run by Toorank Polska.

The spirit is made exclusively from Polish malted wheat. Distilled in a small batch at a single distillery, it was aged for four years in 250-litre American oak casks that previously held Sherry wine. Non-chill filtered and free of added colouring, it has fully retained the flavour and colour drawn from the cask. This is a very rare and original Sherry Cask Single Wheat Polish Whisky. This edition was filled into cask in December 2018 and bottled in March 2023.

The brand is the result of a collaboration with a Scottish master distiller. It was created together with John McDougall, who from the very beginning of the Wild Fields project has been responsible for cask selection, the flavour composition and the maturation period. John McDougall previously worked as managing director and master blender at companies such as Balvenie Distillery, Laphroaig Distillery, Tormore Distillery and Springbank Distillery. Every bottle is numbered by hand and states the distillation and bottling dates.

In the sensory profile, the influence of the wheat malt meets the impact of the sherry cask. The nose reveals earthy notes, delicate sherry, a touch of pleasant oiliness and a rather unusual note reminiscent of a tomato vine. The palate is somewhat sharper and spicy, dry, full of wheaty notes with a slight bitterness, while the finish is warming, with a long aftertaste. Bottled at 46.5% ABV.
