Wild Fields Sherry Cask Single Malt Polish Whisky is a Polish malt whisky from the Podbeskidzie region, matured in casks that previously held Spanish sherry and bottled at 46.5% ABV. It is produced at the Mundivie distillery in Jasienica, as part of a project in which the selection of casks, the flavour composition and the maturation period were overseen from the outset by Scottish Master Distiller and Master Blender John McDougall. McDougall previously worked as managing director and master blender for companies such as Balvenie, Laphroaig, Tormore and Springbank.
The sole raw material is Polish malted barley. Wild Fields Sherry Cask Single Malt Polish Whisky is made exclusively from Polish malted barley, distilled in a small batch at a single distillery and matured for a minimum of three years in 250-litre American oak casks that previously held sherry. Distillation is carried out by the batch method in copper pot stills. This edition was filled into cask in July 2019 and bottled in March 2023.
This bottling preserves the full character of the spirit straight from the cask. Non-chill filtered and without added colouring, it fully retains the flavour and colour of the cask. A very rare and distinctive Sherry Cask Single Malt Polish Whisky. Maturation in sherry casks builds a profile based on notes of dried and dark fruits and nuts, with a dry, slightly bitter palate and a discernible oak influence.
The whisky is strictly limited – this release comes in a 0.7-litre bottle. The natural colour derives solely from contact with the wood, while the absence of chill filtration preserves the oily texture of the spirit. The name "Dzikie Pola" (Wild Fields) alludes to the Sienkiewicz tradition, and the eagle on the label references the drawings of Stanisław Wyspiański.
