Wild Fields Sherry Cask Single Grain Polish Whisky is a Polish single grain whisky, bottled at 44% ABV, whose principal raw material is traditional Polish rye. It is made from grains grown exclusively in Poland, with traditional Polish rye as the main ingredient.

The brand is owned by Toorank (Mundivie), and distillation takes place at a single distillery. Wild Fields is a whisky line released by Toorank Polska of Jasienica, near Bielsko-Biała. The entire project was carried out in collaboration with Scottish master distiller John McDougall. The whisky was created together with John McDougall, who was responsible for the cask selection, the flavour composition and the maturation period; McDougall previously worked as managing director and master blender at distilleries such as Balvenie, Laphroaig, Tormore and Springbank.

The character of this edition is defined by maturation in casks previously used for Spanish sherry. The whisky was aged for 3 years in two 250-litre Spanish oak sherry casks. These were 250-litre American oak casks in which sherry had previously matured. The whisky is not chill-filtered, and its natural colour comes solely from contact with the cask.

In the sensory profile, the producer notes a yellow, pale golden colour. In the tasting note, the producer describes the aroma as honeyed and sweet, with a hint of smoke, the palate as pleasantly full, oily, balanced and well rounded, and the finish as pleasant, medium, very coherent and delicate.

This is a limited, collector's edition. A very rare and original Sherry Cask Single Grain Polish Whisky, created in collaboration with the world-renowned master of distillation and blending, John McDougall.
