WhistlePig 12 Year Old World is an American straight rye whiskey, matured for twelve years and finished in three types of European casks that previously held fortified and sweet wines. It is a rye styled after the Old World, bottled at 86 proof, which corresponds to 43%.
The spirit first matures in new American oak barrels, after which it undergoes the stage that defines the style of this whiskey. Following twelve years of maturation in new American oak, the distillate is divided among one of three cask types – Madeira (63%), Sauternes (30%) and Port (7%) – then finished and blended. Each of these casks brings a different character to the final blend. The Madeira casks contribute a deep note of raisins and molasses, the Sauternes casks add a bright hint of nectarine, and the Port casks lend an accent of grilled cherry.
On the nose, the whiskey opens with tones of caramel, vanilla and winter fruits. On the palate, spicy rye pepper leads the way against a fruity backdrop – apricots, plums, raisins, dates and honey emerge. The finish closes in a register of dark chocolate.
