Underberg is a German herbal digestif (Kräuterlikör) from Rheinberg bottled at 44% ABV, instantly recognisable by its single-serve 0.02 l bottle wrapped in straw paper. It is produced in Rheinberg by Underberg AG from aromatic herbs sourced from 43 countries, according to the secret recipe of the Underberg family, whose members personally oversee the production of the spirit.
The brand's history dates back to the mid-19th century. On 17 June 1846, Hubert Underberg founded the company H. Underberg-Albrecht in Rheinberg, beginning the production and sale of Underberg, a speciality based on aromatic herbs. The distinctive bottle format only appeared after the Second World War. The spirit is usually associated with its 20 ml single-serve bottle, designed in 1949 by Emil Underberg, grandson of the founder; the bottle shape, colour, packaging and the Underberg name are protected by trademark and copyright.
The composition is deliberately minimalist. The wholly natural recipe is based on selected aromatic herbs from 43 countries; Underberg contains only water, alcohol and herbal extracts, with no other ingredients or additives. The herbs come from 43 countries, and the spirit is free of added sugar and caramel. The extraction and maturation process is a company secret. The knowledge of how to carefully draw out the precious herbal essences from 43 countries and transform them into an aromatic spirit is safeguarded by the secret SEMPER IDEM procedure, followed by several months of maturation in barrels of Slovenian oak.
The production method is based on maceration. The herbs and roots undergo hot maceration with distilled water and neutral alcohol, then rest in oak barrels; the label reads "after a good meal". In the glass, Underberg appears as a clear, tawny-amber spirit with brown reflections, showing an intensely herbal profile with liquorice and anise plus a spicy note of cinnamon, cloves and ginger. On the palate there is a distinct attack of clove and anise with herbal-minty, sweetish liquorice, dark chocolate and refreshing orange peel, while the finish closes with bitter quinine and long-lingering black liquorice.
Underberg is traditionally drunk in one go, neat. According to the label, it is not intended for slow sipping but to be drunk straight away and quickly, on account of its aromatic, intense flavour. It is also used as a cocktail ingredient. Its concentrated herbal profile of clove, anise, mint and liquorice means that even a small measure makes a marked impression in drinks of a dry, bitter character.
