Talisker Distiller's Edition is a single malt Scotch whisky from the Talisker distillery on the Isle of Skye, double matured with an additional maturation in Amoroso sherry casks. It is bottled at 45.8% ABV in a 0.7 l bottle.
Talisker is the oldest working distillery on the Isle of Skye. It was founded in 1830 by brothers Hugh and Kenneth MacAskill. The character of the spirit is shaped by medium peating and the unusual design of the equipment. Rebuilt after a fire in 1960, the distillery received exact replicas of the old stills with U-shaped lye pipes, producing a form of double distillation, while condensing takes place in traditional worm tubs. It is precisely these elements that give Talisker its distinctive texture and character.
The Distiller's Edition is created through a two-stage maturation. The whisky first matures in refill casks of American and European oak, and completes its second maturation in heavily re-charred American oak casks seasoned with Amoroso wine. The Distiller's Edition has been released as an annual, limited edition since 1997. The Amoroso-seasoned casks lend the whisky a round, juicy, fruity sweetness that balances the crisp, dry peat smoke and Talisker's characteristic pepperiness.
A maritime note appears in the aroma. The nose is sharp, with clean, fresh sea air and beach seaweed, underpinned by richer, smoky notes, sweet malt and sultana sweetness from the cask. On the palate an oily, silky texture – a flavour at once smoky and salty, yet sweet, with rich fruit, quickly becoming more peppery as woody spice emerges; there are suggestions of baked fig and sweet date, underpinned by peat smoke and sea salt.
