Talisker 30 Year Old is a single malt Scotch whisky from the distillery on the Isle of Skye, matured for three decades and bottled at its natural cask strength of 49.6%. Selected annually from refill American oak casks, it is free from added colouring and non-chill filtered.
Talisker is the oldest distillery on Skye, operating on the island's shore. Based in Carbost and run by Diageo, it was founded in 1830 by the MacAskill brothers. The character of the spirit is shaped by the distillery's seaside location, and the brand's signature style remains a marriage of peat smoke with a pronounced peppery bite. In this edition, thirty years in American oak have softened and mellowed these traits, lending them a subtler dimension.
The nose reveals freshly sliced orchard fruit, waxy red apples, fragrant white pepper, caramel and a gentle creaminess, while alongside the sea breeze comes a growing presence of tropical fruit, cocoa beans and a beach bonfire. On the palate, a warming smokiness with a spicy prickle of chilli and a mild salinity, giving way to layers of apple and pear, smouldering embers and notes of spicy oak. The finish brings lingering warmth with a peppery, cinnamon tingle and notes of ripe fruit, toasted hazelnut and a touch of vanilla.
According to Diageo master blender Stuart Morrison, three decades in oak casks allow the distillery character to develop refined qualities, and as the spirit matures through its second decade, the fruit flavours become more complex, yielding aromatic tropical notes and a peppery smokiness that shifts from coal tar into a warming, smouldering bonfire.
This is a limited edition, returning as an annual series. Talisker 30 Year Old is a whisky made by the sea, capturing the rugged shores of the Isle of Skye; the distillery produces its single malt on the shoreline next to the renowned Oyster Shed, where the whisky has been paired with fresh, local oysters for decades. The spirit's coastal origins give it distinctive maritime and saline notes, making it an excellent match for seafood dishes.
