Rooster Rojo Añejo is a Mexican tequila in the Añejo category, made from 100% blue Weber agave in the Jalisco region. The spirit matures for at least one year in used bourbon barrels, which gives it a dark amber colour and a concentrated, oaky profile.
Behind its production stands the Fabrica de Tequilas Finos distillery, located in the town of Tequila in Jalisco. Rooster Rojo is created in Jalisco, Mexico from 100% blue Weber agave using traditional methods. The brand draws on the image of the red rooster – one of Mexico's most recognisable symbols.
The production process combines traditional and technological elements. The agave piñas are steam-cooked in autoclaves for 10 hours. Special yeasts are added to the agave juices before fermentation, after which the distillate undergoes double distillation in steel pot stills and matures in oak. Finally, water filtered through Mexican silver is added to bring the strength down to 38%. The Añejo variant is based on the same brand's blanco tequila.
The aroma and flavour are dominated by the influence of the barrel. The nose is filled with notes of chocolate, tobacco, oak and coffee, while the palate reveals caramel, vanilla, roasted agave and oaky spice. The creamy texture carries fruit peels, apricot in honey and bitter chocolate, earthy and toasted agave, plus a touch of spicy wood, and the finish brings waves of brown sugar. The tequila is bottled in a distinctive flacon whose shape alludes to the Tequila volcano visible from the distillery.
