Rooster Rojo Ahumado is a smoked reposado tequila made from 100% blue Weber agave, produced in the town of Tequila in the Mexican state of Jalisco. Unlike the other tequilas in the range, which are bottled at 38%, Ahumado is bottled at 40%. It is the fifth expression in the brand's portfolio – Amber Beverage Group unveiled it at Bar Convent Berlin in October 2022.

The brand was created at the Fabrica de Tequilas Finos distillery. In the shadow of the Tequila volcano, in the town of Tequila, stands the distillery, which began operating in 2000, adapting a historic colonial building that has stood there since 1923. Behind the recipe is maestro tequilero Arturo Fuentes Cortes, and the agave comes from the Los Altos highlands of Jalisco.

The smoky character comes from the way the agave is treated. The agave is roasted in an artisanal underground oven for 48 hours, on heated stones and using wood; after being cut, it is covered with dried agave fibre and the entrance to the oven is sealed with moistened earth, then the intensely smoked agave is balanced with traditionally prepared agave, after which the distillate is fermented, double distilled and matured in oak barrels for over two months. Part of the agave is roasted underground with mesquite wood, the rest is cooked traditionally. The water used for distillation is filtered through Mexican silver, which gives the spirit greater complexity and a smoother feel on the palate.

In the aroma profile the producer points to a clearly defined smoky and woody side. On the nose there is smoked wood, leather and roasted agave, on the palate an impression of agave and spices, while the finish is warm and smoky. Other notes attributed to this expression include a mahogany colour, oak, tobacco, coffee and blood oranges on the nose, caramel, oak, vanilla, roasted agave and blood oranges on the palate, and vanilla and oak in the long, soft finish.

Ahumado sits between classic tequila and mezcal – a complex spirit, smoky, fruity and spicy, evoking something between tequila and mezcal. It works well as a sipping tequila, as well as a smoky cocktail base.
