Redbreast Lustau Edition is an Irish single pot still whiskey from the Midleton distillery in County Cork, finished in Oloroso sherry casks from the Lustau bodega. A new addition to the Redbreast range introduced in the second half of 2016, it amplifies the sherry influence familiar to fans of the brand.
The single pot still style is defined by a mash bill combining malted and unmalted barley. Every pot still whiskey is made from a blend of malted and unmalted barley sourced from farms in the Munster region surrounding the distillery. What sets this edition apart is the collaboration between two houses: Bodegas Lustau, one of the most awarded sherry brands in the world, was asked to specially prepare the casks for this release.
The profile is shaped by a multi-stage maturation. Redbreast Lustau Edition is first matured in traditional bourbon and sherry casks for a period of 9 to 12 years, and then finished for an additional year in carefully selected first-fill butts, seasoned with the finest Oloroso sherry from the prestigious Lustau bodega in Jerez, Spain. It is worth adding that Redbreast Lustau is bottled non-chill filtered and without caramel colouring.
On the nose and palate, fruit meets spice and nutty depth. Notes of malt, creamy toffee, ripe dark fruit, complex baking spices, dark honey, peanut butter, hazelnuts, crème brûlée and a touch of aniseed, with an aroma that is rich and velvety. The palate reveals coppery malt, dark confectionery, dark fruit, candied citrus, creamy vanilla pudding, hazelnuts, figs, orchard fruit and a hint of spice. On the finish, the sweetness and spice of the pot still linger, with the last word going to Oloroso sherry and Spanish oak. The producer notes that you need only pour Redbreast Lustau Edition into a glass, and adding a few drops of water will unlock some of its hidden aromas.
For food pairings, the producer suggests specific directions. Pan-fried or grilled steak, char siu pork, roast game, especially with caramelised or roasted root vegetables, mature cheddar and washed-rind cheeses.
