Polowaca Okowita 7 Lat Leżakowana Góralska is a Polish grain eau-de-vie, matured for seven years in oak casks previously used for American bourbon. It is made from whole and malted corn and wheat grains, continuously distilled and aged in casks that once held American Bourbon Whiskey.
The product belongs to the portfolio of the Polowaca brand, which originates from the range offered by Toorank Polska. Toorank Polska S.A. has been active on the Polish market since 1996, focusing on high-quality products intended for a narrow circle of connoisseurs as well as products linked to micro-regions. Its very name records its place in the Polish spirits tradition – "okowita" is the Old Polish term for a strong distillate.
The character of this spirit is determined by its long maturation. The corn and wheat distillate was filled into casks in 2016 at 46% ABV, and bottled seven years later at 40% ABV. The okowita rested in oak casks for a period of 7 years, from 2016 to 2024. Such slow maturation in ex-bourbon wood gives it a golden hue and strips away the harshness of a young distillate.
The sensory profile is led by notes of dried fruit against a grainy background. The nose reveals plum and prune, alongside sweet flour, raisins and figs. On the palate there is pumpernickel with raisins, pear, sour-bitter grapes, grappa and anise. The finish brings fennel, anise, plums, cherries and a hint of almonds. Bottled at 40% ABV, in a 0.5-litre format.
