Grona Merlot pochodzą z minimum 15-letnich krzewów i zbierane są kiedy owoce osiągną optymalną dojrzałość. Po fermentacji alkoholowej, fermentacja malolaktyczna zachodzi w beczkach z francuskiego dębu.
