Lagavulin 16 Year Old is a single malt Scotch whisky from the southern coast of Islay, the distillery's flagship expression and one of the region's most recognisable peated single malts. It has become a benchmark for the whole of Islay.

The distillery lies in the village of Lagavulin in the south of the island, in a small bay near the ruins of Dunyvaig Castle, amid the Kildalton peat bogs, between Ardbeg and Laphroaig. Officially, it dates back to 1816, when John Johnston and Archibald Campbell Brooks built two distilleries on the site. Lagavulin is renowned for its slow distillation and pear-shaped stills – two wash stills with a capacity of 11,000 litres and two spirit stills of 12,500 litres each. Today the brand belongs to the Diageo group.

The whisky's character is shaped by a production style built on slowness. Lagavulin undergoes the slowest double distillation of all Islay whiskies; the wash stills are filled to 95% of their capacity, which limits contact between the vapours and the copper, while the cut in the spirit still is wider than at most distilleries, leaving more phenols in the spirit. Fermentation lasts around 72 hours, after which the spirit is distilled twice – first in the wash still for about five hours, then in the spirit still for about nine hours. This sixteen-year-old whisky is bottled at 43% ABV.

The whisky matures in oak casks for at least 16 years and carries the massive peat-and-smoke profile typical of southern Islay, combined with richness and dryness. On the nose, intense peat smoke with iodine, seaweed and a deep, luscious sweetness. On the palate, dry peat smoke fills the mouth with a gentle yet distinct sweetness, followed by maritime notes, salt and hints of wood; the finish is long, elegant and full of peat, with salt and seaweed. It pairs well with intense, salty blue cheeses, which complement the peaty-sweet-salty character of this whisky.
