KAH Blanco is a blanco-category tequila from the Mexican state of Jalisco, made from 100% Weber blue agave and bottled without wood ageing, at 40% ABV.
The brand was created in the region of the town of Tequila. KAH Tequila is produced by Fabrica de Tequilas Finos in the town of Tequila in Jalisco, at the foot of Tequila Volcano – an area inscribed on the UNESCO World Heritage list. Most of the people working at the distillery have been with it since its founding in 2000, including KAH's master distiller Arturo Fuentes, who co-created the brand more than a decade ago. The brand's name refers to the symbolism of the festival of the dead: KAH means "life" in the ancient Mayan language, and the distinctive ceramic bottle alludes to the Mexican celebration of Día de los Muertos, the Day of the Dead.
The production process is based on traditional craftsmanship. Only the heart of the plant (the piña), which accumulates the sugars, is used, and the planting, tending and harvesting of the agave remain manual work – carried out by jimadores, who pass on their knowledge of cultivation from generation to generation. After harvesting, the piñas are cut into two or four pieces and slowly baked for around nine hours, then shredded to extract the sweet juice. Yeast is added to the agave juice, which is transferred into large stainless steel vats for several days of fermentation, after which the wash is distilled twice, yielding a clear blanco tequila. The agave comes from the lowland part of Jalisco, and processing is carried out using an autoclave, a roller mill and steel stills; KAH tequila holds organic and kosher certification.
As a distillate bottled without wood ageing, KAH Blanco remains crystal clear and showcases the character of the agave itself. On the nose there is a salty, damp note of cement with a touch of new leather, butter, lime and green apple peel; the palate is clean, salty and lightly sweet, with a distinct agave character, cinnamon and peppery bite, while the finish returns with salty, spicy black pepper alongside delicate vanilla and roasted agave. This is a twice-distilled, unaged tequila made from 100% blue agave at 40% ABV; initially sweet, it quickly turns to peppery heat, silky and delicate, with an array of spicy notes on the palate.
