Johnnie Walker Blue Label Elusive Umami is a limited edition blended Scotch whisky from the top-tier Blue Label range, built around umami – the so-called fifth taste. It was created as an exploration of one of the most difficult flavour profiles to define, the result of a collaboration between two masters: Master Blender Emma Walker and chef Kei Kobayashi.
Casks from both inland and coastal distilleries were selected for the blend, chosen at the peak of their maturation for their distinctive umami profile. According to the producer, only one in 25,000 casks is suitable for capturing this elusive character, and the whiskies were chosen much like culinary ingredients – from salty and smoky notes to dry, meaty flavours. The bottle is filled with whisky at 43% ABV.
The aromatic profile combines sweetness with savouriness. The nose reveals fresh green and red apples, confectionery sweetness, notes of cashew nut and salty brine, with a pronounced, savoury depth and good aromatic persistence. On the palate, apple and white peach come through first, followed by a balanced composition of sweet and savoury flavours, with notes of blood orange and red berries, a hint of smoked meat and warming salt and pepper, closing with a long, sweet-fruity finish. In The Whisky Exchange's tasting, charred orange peel and chanterelle mushrooms come through immediately, against a backdrop of sea salt, cranberry, sweet oak spice, star anise and cardamom.
The producer composed this whisky with food pairing in mind. Oscietra caviar is recommended as an accompaniment, chosen for its concentration of umami and mineral character, which is intended to complement and highlight the whisky. The whisky itself unveils notes of caramelised miso, tropical hints of grilled pineapple, cocoa and blackberry tannins, all rounded off by a cleansing, mineral saltiness.
