Jack Daniel's Old No. 7 is a Tennessee Whiskey from the distillery in Lynchburg, Tennessee, distinguished by charcoal filtration in the Lincoln County Process. It is bottled at 40% ABV. Although it meets most of the criteria for bourbon, the additional charcoal mellowing step makes it a legally distinct category — Tennessee whiskey.

The foundation is a blend of grains, with Old No. 7 distilled from the signature mash bill of 80% corn, 12% barley and 8% rye. The producer uses the sour mash method, in which fermented mash from an earlier batch is added to the fresh mash. This helps control the pH and maintain consistency between batches. The mash ferments for six days with the distillery's proprietary yeast strain and is then distilled to 140 proof.

The defining feature is the stage that follows distillation. The clear distillate flowing from the columns drips at a rate of three litres per minute through one of 72 large white oak vats, each filled with 10 feet of densely packed sugar maple charcoal, with the filtering taking three days. The process relies solely on gravity, not pressure, and is known as the Lincoln County Process. Only after charcoal mellowing does the whiskey go into new charred oak barrels for maturation lasting around four to five years, though no age statement appears on the label. The producer itself emphasises that whiskey mellowed drop by drop through 10 feet of sugar maple charcoal, and then matured in handcrafted barrels, does not follow the calendar but is ready only when the tasters decide it is.

The profile is dominated by malty-fruity and grainy notes. The nose offers banana bread, brown sugar, caramel, toffee, a light touch of toffee apple and a note of malted barley lending a biscuity character. On the palate there is sweet corn up front, followed by toasted vanilla pods, banana custard, raisins, dried fruit, spicy rye and charred oak. The finish is warm, sweet and lingering, closing with a combination of gentle smoke and oak wood.

The Lynchburg distillery has a long tradition. The Jack Daniel Distillery has been producing whiskey since 1866, making it the oldest registered distillery in the United States. Old No. 7 works well neat, on the rocks, or as a base for cocktails, for example with cola.
