Highland Park 12 is a single malt Scotch whisky from the distillery on Orkney, Scotland's most northerly distillery, recognisable for its gentle, heathery peat smoke. The 12 was introduced in the 1970s as the first whisky in the distillery's core range. For years this expression carried the epithet Viking Honour, the Viking Honour moniker having been added to the twelve-year-old in 2017, only for the name to be dropped and the label refreshed in 2024.

At the heart of this whisky's character is Orkney peat, quite different from that of Islay. A dozen or so kilometres from the distillery, the peat is cut at Hobbister Moor, where flowering heather lends it the signature character for which Highland Park is renowned. The distillery maintains the labour-intensive tradition of floor malting: the barley is spread across the floor and regularly turned by hand to ensure even germination, then dried using Orcadian peat saturated over centuries by salty sea spray. It is worth adding that only around 20% of the malt used to produce Highland Park is floor malted; the remainder is unpeated and comes from external suppliers.

Maturation completes the style. To achieve the balanced character of the twelve-year-old, whiskies matured in carefully selected first-fill sherry casks of European and American oak are married together, giving the main profile of spiced sweetness and gentle warmth, while additional refill casks round off the more assertive notes derived from the first-fill casks. The whisky has a natural golden-amber colour straight from the cask.

The sensory profile is dominated by a controlled sweetness interwoven with delicate smoke. On the palate it is sweet and spicy, with toasted notes of burnt orange, jasmine and fruit cake, while the long finish carries peppery spice, woody tones and orange peel along with a subtle, aromatic hit of the smoke that only Orcadian heather peat can give. Here the smoke remains a seasoning rather than the main course – the peat is sweeter, more floral and better integrated than Islay's maritime smoke. Bottled at 40%.

Highland Park 12 is a versatile single malt straddling styles. It occupies a position bridging the smoky intensity of Islay and the sweet richness of Speyside. It works well as an introduction to Orcadian peat, served neat or with a splash of water. As for food pairings, sources suggest game, spicy chocolate-and-ginger biscuits, creamy soft cheeses and bold sushi with wasabi, among others.
