A limited-edition 21-year-old blended whisky created by the GlenAllachie Distillers Company under the watchful eye of Billy Walker. When he took over the GlenAllachie distillery in 2017, Billy Walker also acquired the rights to two whisky brands: MacNair's, which he brought back to the market as a blended malt whisky, and White Heather – a brand that had lain dormant since the 1980s. This time it returns as a blended whisky limited to 2,000 bottles with an exceptionally high single malt content (47%). For this remarkable composition, Billy Walker sourced grain and malt whiskies from the Highland, Speyside and Islay regions, which matured for 18 years in first- and second-fill bourbon barrels and sherry butts. After blending, the whiskies were then transferred for 3 years into puncheons that had previously held Pedro Ximénez and Oloroso sherry, as well as virgin oak casks made from Appalachian oak. The result is an exceptionally well-balanced whisky bottled at 48% ABV, at natural colour and without chill filtration. Within it we find delicate peat notes from the Islay whisky (4%), fruity Speyside notes (23%), heather-and-honey sweetness from the Highlands (20%) and a rich, rounded foundation of grain whisky (53%), all perfectly balanced with the composition as a whole. Aroma: soft, sweet accents of heather honey, toffee, toasted wood, a gentle whiff of peat and a hint of tannins. Palate: rich notes of heather honey, toffee, orange peel and delicate tannins with accents of peat and smoke.
