An exceptional wine created from Tempranillo (95%) and Albillo (5%) grapes grown on the Hoyo Dornajo plot at an altitude of 830 m above sea level. The harvest was carried out by hand, after which the wine underwent spontaneous fermentation with wild yeasts. Both the vinification and the ageing (17 months) took place in 1,200-litre, 19th-century clay amphorae. Production is very limited — the wine is bottled and "labelled" by hand, with only about 1,600 bottles produced. The colour is dark, purple and bright. The aroma is very intense and strongly fruity. On the palate it is very elegant, mineral and fresh. Red and dark fruits, round and soft tannins and a finessed finish. Of a wine like this one may say that it has a "soul". Ideal with medium-mature cheeses, white meats, sausages and fish in richer sauces.
The story of this wine began with an idea that gradually grew into great enthusiasm, determination and eagerness to make wine the way it was made in the past. As part of this concept, the winery acquired in Toledo 4 large clay amphorae, over 100 years old.
Four parcels were selected within 3 terroirs: Hoyo Dornajo, La Mina and Salgüero, from which the grapes were hand-harvested and then fermented with wild yeasts only, each parcel separately in a different amphora. After seventeen months, the wine from one of them (the one containing wine from the Hoyo Dornayo parcel) was filled into 1,614 bottles.
