Cydr Louis de Lauriston jest skomponowany z ponad 50-ciu różnych odmian jabłek. Gatunki z odrobiną goryczy i tanin, nadają mu struktury i ciała. Słodkie odmiany gwarantują owocowe aromaty, a kwasowe – świeżość. Dojrzałe jabłka są rozdrabniane i wyciskane, aby uzyskać naturalny sok, który następnie powoli fermentuje do momentu osiągnięcia od 2 do 4% alkoholu.
