Calabrone to wino klasy Reserva, produkowane tylko z wybitnych roczników - kiedy wrzesień i październik są wyjątkowo suche i łagodne. Część zbiorów zostaje poddana procesowi appassimento co podkreśla niewiarygodną miękkość, smak i taniny winogron. Calabrone Bastianich jest kompozycją Refosco, Schioppettino i Merlot. Refosco jest podsuszane, następnie odszypułkowywane i bardzo delikatnie wyciskane. Dojrzewanie 2 lata w nowych beczkach z dębu francuskiego. Gotowe wino leżakuje kolejne 24 miesiące w butelkach. Powstaje wino pełne aromatów czekolady, kawy, przypraw i przejrzałych, czerwonych owoców, o eleganckim i pełnym smaku, długim finiszu i sporym potencjale dojrzewania.
