Baker's Bourbon is a Kentucky Straight Bourbon from the Jim Beam Small Batch collection, bottled as a single barrel at 53.5% ABV. As of October 2019, Beam announced that this whiskey would be sold as a single barrel offering, still aged for at least 7 years and bottled at 107 proof. In practice, this means that every bottle comes from a single barrel, with the fill date, barrel number and age displayed on the neck.

The brand is named after Baker Beam, the great-grandnephew of Jim Beam and a longtime distiller at the Clermont, Kentucky plant. Baker's Bourbon, created in 1992 by sixth-generation master distiller Booker Noe as part of the original Small Batch Bourbon Collection, is named after Baker Beam – Jim Beam's great-grandnephew and a distiller who worked at the Jim Beam distillery for 38 years. Baker's Bourbon is one of the four bourbons making up the Jim Beam Small Batch collection; the others are Basil Hayden's, Knob Creek and Booker's Bourbon.

The spirit is distilled at the Jim Beam distillery in Clermont, Kentucky. Baker's uses a yeast strain that has been kept in the family for over 60 years. The producer does not disclose the exact mash bill, but declares that it is a Kentucky Straight Bourbon – which by law means a grain bill with at least 51% corn and maturation in new, charred American oak barrels. Baker's Bourbon is distilled at a lower proof and then barrelled and aged to draw more notes of roasted nuts, fruit and vanilla out of the barrel wood.

The aroma and flavour profile is led by characteristics typical of the Beam style. Aromas of fruit, vanilla and caramel are followed by a medium-bodied flavour profile with notes of oak, roasted nuts and vanilla, while the finish is warm and rounded, with distinct flavours lingering on the palate. On the nose, a pronounced note of alcohol initially dominates, but after a moment in the glass oak, vanilla and cinnamon emerge. The higher strength emphasises the structure – at 53.5% ABV, notes of fruit and cloves clearly come through.

The 0.7 litre bottle is supplied in a tube. It is worth remembering that, as a single barrel product, Baker's varies slightly from barrel to barrel – each bottle is filled from one single barrel, which means that inside you will find a bourbon full of small, subtle details that change from barrel to barrel.
