Antica Formula is a sweet Vermouth di Torino, produced in Italy to a recipe whose origins go back to Turin and the year 1786. This vermouth was first created in 1786 in Turin by Antonio Benedetto Carpano, and the product is regarded as one of the oldest sweet vermouths in history. It is bottled at 16.5% ABV.
The base is white wine made from Italian grapes. The wine comes from selected Italian grape varieties from the regions of Romagna, Puglia and Sicily, processed within 24 hours of delivery to prevent oxidation. Production is based on the hot and cold extraction of 130 botanicals, refined over months, followed by blending with sugar, caramelised sugar and alcohol. Among the ingredients disclosed by the producer are vanilla and bitter wormwood. The wormwood used in Antica Formula comes exclusively from the Alpine areas of Piedmont and the Aosta Valley, while the bottle's characteristic vanilla aroma comes from beans imported from Madagascar, Papua New Guinea and Tahiti. The vermouth also contains saffron from the highland regions of Iran. Caramelised sugar is a natural ingredient which, alongside the botanicals, ties together the many flavours of Antica Formula thanks to its distinctive aromatic quality.
Today the brand belongs to the Fratelli Branca group. The company changed hands several times and was acquired by the Milanese firm Fratelli Branca Distillerie in 2001. Production is currently overseen by Fratelli Branca Distillerie, whose president Niccolò Branca is one of only three people who know the complete, secret recipe.
In the glass, the vermouth has an amber colour. The hue is light brown with an amber tint. On the nose, a bouquet of vanilla with spicy, citrus and dried notes of almonds, raisins and cloves. On the palate, a round, rich vanilla flavour that picks up the aromas from the nose. It combines well with notes of bitter orange, dates, cocoa beans and saffron. The profile is bittersweet, with a clear structure and a slightly syrupy density.
Antica Formula is sometimes served chilled, on ice with a twist of orange peel, and also as an ingredient in classic cocktails. It can be served chilled as an aperitivo, a digestivo or as an addition to your favourite cocktail. It works well in such classics as the Negroni, Manhattan or Americano.
