Located in the very heart of Aichi Prefecture, the Hekinan distillery is a gem of the Japanese spirits industry. The distillery began production in 1949 and quickly became the leading producer of Japanese whisky in the Chubu region in the 1950s. Unfortunately, severe natural disasters in 1953 and 1959 disrupted whisky production. Despite these hardships, the distillery persevered in its passion for whisky, symbolised by the phoenix featured in the company's logo.
Its rebirth came in 2019 with the support of BBC Spirits, when the distillery released its first batch of whisky under the name Hinotori, which in Japanese means precisely "phoenix". The humid subtropical climate, excellent quality water and the region's rich traditions in the art of fermentation provide outstanding conditions for whisky production. Techniques known from shochu production are employed in its creation. Distillation is carried out using two stills of unique shape, while the clay, breathable warehouse walls ensure a balance of humidity and temperature, and thus wonderful conditions for maturing whisky. Production is still very small, and the warehouses currently hold slightly more than 200 casks of whisky
