On February 26th at Gardens by Fort in Warsaw, we organized a dinner for the HoReCa industry to celebrate the 25th anniversary of Domaine Paul Mas winery. The evening was hosted by Jean-Claude Mas himself – the founder and winemaker of the estate. When a producer personally leads a tasting, guests receive something that can't be found in any label note – context, decisions, and the story straight from the source. What was on the table The menu was built from lighter to fuller wines, pairing dishes to bring out the best in each wine. An aperitif with Prima Perla Crémant Brut opened the evening. For starters: panko shrimp with Picpoul de Pinet, celery steak with hollandaise sauce with Blanc Languedoc Château, tofu cabbage rolls in shiitake dashi broth with Rosorange. For main courses: orecchiette with porcini mushrooms and Grana Padano with Astelia Le Petit Prince 2023, and beef tenderloin with Château Clos des Mures.
