Woodford Reserve Double Oaked is a Kentucky Straight Bourbon from the distillery in Versailles, Kentucky, distinguished by its maturation in two separate new oak barrels. After the first maturation in new oak barrels toasted for 10 minutes and charred for 25 seconds, the whiskey is transferred into barrels toasted for 40 minutes with a mere 5 seconds of charring. This second barrel, heavily toasted before a light char, gives the spirit its signature profile.
The drink is based on the classic Woodford Reserve mash bill. The whiskey begins as standard Woodford Reserve straight bourbon, made from a mash of 72% corn, 18% rye and 10% malted barley. The base distillate is a blend of spirit from two sources. Part is produced on column stills at the Brown-Forman Distillery, part on pot stills at Woodford Reserve, after which both components mature in cyclically heated warehouses. Double Oaked is created by transferring Woodford Reserve Distiller's Select into a second barrel of new charred oak for a little under a year; this second barrel is deeply toasted before a light char.
The profile is dominated by dark, sweet and oaky notes. The producer describes a deep amber colour and notes of dark fruit, caramel, sharp honey, chocolate, marzipan and toasted oak, while on the palate a full structure with vanilla, dark caramel, hazelnut, apple, fruit and spices; the finish is long and creamy with a hint of honeyed apple. The reduction of rye brings sweetness and oak to the fore. The sharpness of the rye is distinctly toned down, making room for notes of sweet vanilla, oak and dried fruit.
The bourbon is bottled without a stated age. Double Oaked is a no-age-statement whiskey, typical of Woodford, whose whiskeys are blended from barrels of varying age and profile, with the distillery choosing not to state even the youngest age on the label. It is known, however, to be at least 4 years old, with the average age probably around 5 years, as the whiskey spends just under a year in the second barrel.
