WhistlePig Small Batch Rye Aged 10 Years is an American straight rye whiskey bottled in Vermont, built on a mash bill of 100% rye. It's a high rye whiskey with a distinctly spicy profile, bottled at 100 Proof, or 50%.
WhistlePig was founded in 2007 on a farm in Vermont, and this edition owes its existence to the work of the late Dave Pickerell, previously master distiller at Maker's Mark for well over a decade. Pickerell sourced a 100% rye whiskey aged 10 years from a Canadian producer in order to bottle it as WhistlePig 10 year-old Straight Rye Whiskey. The whiskey is initially matured in Canada and then continues to age at the WhistlePig farm in Vermont. The spirit comes from Alberta, where it was distilled and initially aged; WhistlePig 10 Year itself debuted in the summer of 2010, is made from 100% rye and, after a total of ten years of maturation, with part of the ageing carried out in Vermont, is bottled at the WhistlePig farm at 100 Proof.
A mash bill based exclusively on rye is a rarity – Alberta Distillers doesn't use corn, openly declaring that their rye whiskies start with a 100% rye mash; 100% rye is notoriously difficult to ferment, which is why few producers use such a high proportion, and Alberta developed its own enzyme derived from the Aspergillus fungus to convert rye starch into sugars. The character of the maturation comes from a combination of casks: orange, pineapple and banana remain in the foreground, a reminder of the high rye content and the time spent in new white oak and ex-bourbon barrels.
On the nose, rye sharpness meets the sweetness of baked goods. Allspice, orange peel, anise, oak, char and caramel. On the palate the profile is fruity and spicy – the taste is fruity, dominated by orange and pineapple with a touch of vanilla. A vigorous spread across the palate releases rye spiciness and oiliness along with a slightly nutty-malty blend, while the alcohol builds, allowing oak and slightly bitter tannins to coat the mouth and remind you that this is still 50% and ten years of ageing in oak. A sweet opening with notes of caramel and vanilla, moving into rye spice and mint, and the finish is long, with warm cream custard and caramel.
Stylistically, this is rye with no concessions to the milder, sweeter American ryes with corn in the mash bill. WhistlePig's mash bill at (or close to) 100% rye is about as far from bourbon as a rye can get, going all in on rye flavours and finishing with a spicy sip and finish. It works neat, with a drop of water, and in classic cocktails such as the Manhattan or Old Fashioned.
