Nero d’Avola (czerń z Avoli) jest główną odmianą ciemnej winorośli na Sycylii i chlubą tutejszego winiarstwa. Wino fermentuje w stalowych kadziach, w których następnie dojrzewa 4 miesiące by kolejno 8-10 miesięcy spędzić w beczkach tonneaux o pojemności 500 l. Barwa wina jest intensywnie rubinowa. Nos jest ekspresyjny z dominacją ciemnych owoców, wiśni w czekoladzie, jagód i jeżyn z pikantnymi przyprawami i nutami żywicznymi. W smaku jest harmonijne i pełne, o wygładzonych taninach z lekką słodyczą dojrzałych ciemnych owoców i lukrecji. Świetnie nada się do cięższych dań jak dziczyzna, zrazy wołowe, gulasz jagnięcy oraz wieprzowy czy dojrzewających serów.
