A wine crafted from two grape varieties, Cabernet Sauvignon and Merlot, growing on exceptionally poor soil, which through its low water content yields small, highly concentrated fruit. Both grape varieties are vinified separately, unless it is possible to combine them from the outset, if their grapes have ripened at the same moment. The grapes then undergo cold maceration for a minimum of 8-10 days and malolactic conversion in new and one-year-old barrels (50:50). Maturation takes place over 15-18 months in second-use barrels. The result is a wine with a deep, cherry-red colour. On the nose a complex aroma with notes of ripe fruit, raisins, honey, roasted caramel and eucalyptus, with aromas of wax and leather set against an intensely mineral background. On the palate it is round, with fruity and woody notes blending perfectly with a background of jam and toast. The finish is long, round and velvety. Best within the first 5-7 years.
