100% Negroamaro pochodzące z samego serca Salento w prowincji Brindisi. Fermentacja odbywa się w zbiornikach ze stali nierdzewnej w kontrolowanej temperaturze. Następnie wino odpoczywa przez 6 miesięcy w tychże zbiornikach i dojrzewa kolejne 6 miesięcy w butelce, zanim zostanie wprowadzone na rynek. Pellirosso ma intensywnie rubinowy kolor. Nos otwiera się zapachem powideł, ciemnych jagód z nutami balsamicznymi. Na podniebieniu jest miękkie i owocowe, o doskonałej równowadze i smaku z przyjemnym zakończeniem. Doskonale komponuje się z grillowanymi mięsami, duszonymi warzywami, soczewicą z chorizo, kurczakiem teriyaki i górką jagnięcą.
