Winogrona były podsuszane przez 15 dni, podczas których straciły ok 50% swojej objętości, ale za to zyskały typowe dla procesu appassimento akcenty dojrzałych owoców, suszonej śliwki i rodzynek. Wino następnie dojrzewało przez 3-4 miesiące w beczkach dębowych. To wyjątkowe wino, o głębokiej, purpurowej barwie i zniewalającym aromacie czerwonych owoców, przypraw i wanilii. W smaku miękkie, pełne, intensywne, z dojrzałą taniną. Idealne do pieczeni, dziczyzny i serów.
