West Cork Distillers is an independent Irish distillery founded in 2003 in the fishing village of Union Hall in County Cork. The southernmost distillery in Ireland, it produces grain, single malt and pot still whiskey, present in over 60 markets worldwide.
The distillery was founded in 2003 by three friends: John O'Connell and Denis and Gerard McCarthy. The location was Union Hall – a picturesque fishing village in the West Cork region, which forms the south-western part of County Cork, the largest administrative area in Ireland. This region is famous for its beautiful peninsulas, beaches and picturesque towns. Growing demand for West Cork products led to production being moved to nearby Skibbereen in 2013.
West Cork produces grain, single malt and pot still whiskey. All are triple distilled in pot stills. Interestingly, the mashing, fermentation and distillation equipment – except for two Holstein-type pot stills – were handmade by the distillery team. Only spring water and local grains are used in production: barley and wheat. The distillery buys malted barley, but also prepares certain batches in-house. The founders are constantly seeking new solutions – for example in the method of charring barrels.
Mainly bourbon, sherry, port and rum casks are used for maturing the whiskey – each type of wood gives the distillate a different character and complements the flavour profile.
