Nero d’Avola (czerń z Avoli) jest niepodzielnie królem ciemnych winogron na Sycylii. Fermentacja ma miejsce w stalowych kadziach, a następnie wino dojrzewa przez 2-4 miesiące częściowo w kadziach i beczkach z francuskiego dębu.
