Dzięki chłodnym, południowym powiewom morskiego wiatru, owoce szczepu Merlot dojrzewały w optymalnych warunkach. Ręczne zbiory odbywały się wczesnym rankiem dla zachowania jak najlepszej jakości owoców, które następnie były ręcznie sortowane i odszypułkowane. Fermentacja malolaktyczna w beczkach z dębu francuskiego czwartego użycia, następnie wino dojrzewało przez 12 miesięcy.
