Żubrówka Bison Grass is a flavoured vodka from Poland, with every bottle distinguished by a blade of bison grass (Hierochloe odorata) immersed inside. It is produced at the Polmos Białystok distillery, owned by Central European Distribution Corporation (CEDC), in north-eastern Poland, on the edge of the Białowieża Forest. The bottle holds 0.7 litre and the alcohol strength is 37.5%.

The base is a grain distillate flavoured with a bison grass macerate. Żubrówka is the folk name covering two species of grass: sweet grass and holy grass. They grow in north-eastern Poland, particularly in the Białowieża Forest. These are small plants, 40 to 60 cm tall, with a characteristic, strong scent of coumarin – a substance with an aroma of fresh hay, honey and bison fur. The plant grows exclusively in the wild, in natural conditions, and harvesting it requires a permit renewed every year.

The macerate itself is created in a two-stage process. Producing bison grass macerate is a two-step procedure, consisting of water and alcohol maceration. The dried grass is placed in special devices called macerators, which allow it to circulate together with the extraction agents. The process takes place under strictly controlled conditions. Once the appropriate essence has been obtained, it is left to season for several days, after which the liquid is filtered, as it must be purified and filtered to be fit for vodka production. The resulting macerate is a liquid of intensely green colour with the taste and smell of freshly cut hay.

On the nose and palate a grassy-herbal theme leads the way. This vodka, flavoured with Hierochloe odorata grass, a blade of which is immersed in every bottle, has a slightly greenish, clear hue and a subtle flavour. Consumers find in it a clean taste with accents of vanilla, cinnamon and almond. The characteristic sweetish, hay-like profile comes directly from the coumarin present in the grass.

The best-known way to serve it is the szarlotka – combined with apple juice, preferably cloudy. Żubrówka also works well as a base for long drinks and cocktails. Among its accolades, the brand has won, among others, the Grand Gold Medal at the Monde Selection competition for Żubrówka Bison Grass.
