Wino skomponowane wyłącznie z gron odmiany Chardonnay, pochodzących ze starych nasadzeń (około 30 lat). 80% wina fermentuje w stalowych tankach, pozostałe 20% w beczkach z dębu amerykańskiego. Po fermentacji wino dojrzewa 3 miesiące na osadzie. Żółto - złota szata z jasnosłomkowymi refleksami. Elegancki bukiet z intensywnymi aromatami ananasa, orzechów laskowych, pigwy i kwiatu limonki, z nutami wanilii i tostów. Usta bogate z dobrze wyważoną kwasowością i długim posmaku ananasa. Paul Mas Chardonnay to znakomity towarzysz dla owoców morza, potraw z ryb, białych mięs, a także fois gras i serów z niebieską pleśnią.
